Ingredients

Scale
  • 2 lbs beef chuck roast (cut into large chunks)
  • 1 tbsp coconut oil
  • 1 large yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 can (14 oz) full-fat coconut milk

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and grated ginger; cook for an additional minute.
  2. Increase heat to medium-high and add beef chunks, browning on all sides for about 5-7 minutes.
  3. Stir in curry powder, turmeric, coriander, and optional chili flakes; cook for another 2 minutes before adding tomato paste.
  4. Pour in coconut milk while stirring continuously, then bring to a gentle simmer.
  5. Reduce heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours or until the beef is fork-tender.
