  • 2 lamb shanks
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • Salt and pepper, to taste
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 1 (14 oz) can full-fat coconut cream
  • 2 cups beef or chicken broth
  • Juice of 1 lime

Instructions

  1. Sear the lamb shanks in olive oil over medium-high heat until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onions until translucent, then add garlic and ginger, cooking until fragrant.
  3. Stir in ground coriander, cumin, and cinnamon for about 30 seconds.
  4. Return the lamb to the pot with sweet potato chunks; add coconut cream and broth. Squeeze lime juice over the mixture.
  5. Bring to a boil, reduce heat to low, cover, and simmer for 2-3 hours until fork-tender.
  6. Serve warm over rice or quinoa.
