  • 1.5 lbs beef chuck, cut into 1.5-inch cubes
  • 2 tbsp vegetable oil
  • 1 large yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red or yellow curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth or water
  • 1 cup jasmine rice
  • Salt & freshly ground black pepper
  • 1 tbsp brown sugar
  • Juice of lime

Instructions

  1. Season beef cubes with salt and pepper. Heat vegetable oil in a large pot over medium-high heat. Sear beef in batches until browned on all sides (about 3-4 minutes). Remove and set aside.
  2. In the same pot, add sliced onions; cook until translucent (about 5 minutes). Stir in minced garlic and grated ginger; sauté for another minute.
  3. Add curry paste and ground turmeric, mixing well. Pour in coconut milk and broth (or water); stir to combine. Add brown sugar and lime juice.
  4. Return seared beef to the pot, bring to a gentle simmer, cover, and reduce heat to low. Cook for about 1.5 hours until the beef is tender.
  5. While the beef braises, prepare jasmine rice according to package instructions.
  6. Serve braised beef over jasmine rice with warmed garlic naan and garnish with chopped cilantro or Thai basil.
