Coconut Dome with Chocolate Spread is an exquisite dessert that marries rich flavors with a stunning presentation, making it the perfect treat for any occasion. This delightful dish features layers of creamy coconut mousse encased in a crunchy cocoa shortbread base, all topped with a luscious gooey chocolate spread.

  • 200ml heavy cream
  • 80g mascarpone
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • 3 egg yolks
  • Gooey cocoa spread
  • 2 Vegan gelatin sheets (4g)
  • 80g powdered sugar
  • 120g powdered sugar
  • A pinch of sea salt
  • 1/2 sachet baking powder

Instructions

  1. In a chilled mixing bowl, whip heavy cream with mascarpone until fluffy, gradually adding powdered sugar.
  2. Soak vegan gelatin sheets in cold water and heat coconut milk until warm; dissolve the gelatin in it and fold into the whipped cream.
  3. Pour half of the mousse into hemisphere molds, add a teaspoon of gooey cocoa spread, then cover with more mousse. Freeze for at least 6 hours.
  4. For cocoa shortbreads, mix softened butter and powdered sugar until creamy. Combine flour, cocoa powder, sea salt, baking powder, and egg yolks to form dough. Chill for 30 minutes, roll out, and bake until firm.
  5. Assemble by placing frozen domes on cooled shortbread bases and thaw at room temperature before serving.
