  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 cups coconut milk

Instructions

  1. Prepare the ingredients: Trim beef cubes, chop the onion, mince garlic, and grate ginger.
  2. Brown the beef: Heat vegetable oil in a large pot over medium-high heat. Season beef with salt and pepper, add in batches to avoid overcrowding, and brown all sides for about 5–7 minutes. Remove beef from pot.
  3. Sauté aromatics: In the same pot, add onions and sauté until translucent (about 5 minutes). Add garlic and ginger; cook for another minute until fragrant.
  4. Add spices: Stir in curry powder, cumin, and coriander; cook for about 1–2 minutes until well combined.
  5. Simmer the curry: Return beef to the pot, pour in coconut milk to cover the meat, bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours until beef is tender.
  6. Prepare fries and rice: Cook fries according to package instructions or fry fresh; prepare rice as per package directions.
