  • 2 TBSP Instant coffee
  • 2 1/2 cups All-purpose flour
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed)
  • 1/2 cup White granulated sugar
  • 2 Large eggs
  • 1 1/2 cups Semi-sweet chocolate chips
  • 1 tsp Ground cinnamon
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Salt

Instructions

  1. Blend instant coffee into a fine powder using a food processor. In a medium bowl, sift together flour, baking soda, baking powder, salt, and cinnamon.
  2. In a large bowl, mix melted butter, brown sugar, white sugar, vanilla extract, and eggs until combined.
  3. Gradually incorporate the dry mixture into the wet ingredients using a rubber spatula. Fold in chocolate chips.
  4. Preheat your oven to 350°F and line cookie sheets with parchment paper while allowing the dough to rest.
  5. Scoop dough onto prepared sheets; bake for 12-14 minutes until edges are golden but centers remain soft.
  6. Cool on the pan for five minutes before transferring to a rack.
