Ingredients

  • 4 medium-sized potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups kale or cabbage, chopped
  • 1 cup heavy cream or coconut milk
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and chop all vegetables: dice potatoes, chop onion, mince garlic, and prepare greens.
  2. In a large pot over medium heat, add a splash of vegetable broth. Sauté the onion until translucent, then add garlic until fragrant.
  3. Stir in the diced potatoes and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until potatoes are tender.
  4. Add chopped kale or cabbage to the pot and stir well. Simmer for an additional 5-7 minutes until greens are wilted.
  5. Blend the soup until smooth using a blender or immersion blender; return to heat.
  6. Stir in heavy cream or coconut milk, season with salt and black pepper to taste, and heat through before serving.
