  • 1 chicken breast, cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 cup rice (white or brown)
  • 1 small carrot, diced
  • 1 tbsp onion, finely chopped
  • Salt to taste
  • 1 tsp olive oil or butter
  • 1 small zucchini, sliced
  • 1 tsp olive oil
  • Pinch of oregano
  • Salt & pepper
  • 1 cup spinach or kale, chopped
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • Salt to taste
  • 1 cup cherry tomatoes, halved
  • Cucumber, sliced
  • 1 handful lettuce or arugula
  • 1 tsp olive oil
  • 1 tsp vinegar or lemon juice
  • Salt & pepper

Instructions

  1. Sauté onion in olive oil until translucent. Add diced carrots and stir in rinsed rice. Pour in water along with salt. Simmer until rice is fluffy and carrots are tender.
  2. Toss cubed chicken in olive oil and seasonings. Sauté in a skillet over medium-high heat until golden brown and cooked through (about 6-8 minutes).
  3. Toss zucchini slices with olive oil and seasonings. Spread them on a baking sheet and roast at 200°C (400°F) for 15-18 minutes, flipping halfway through.
  4. In a hot pan with olive oil, cook minced garlic for about 30 seconds. Then toss in chopped greens with salt. Sauté until wilted (2-3 minutes).
  5. In a mixing bowl, combine cherry tomatoes, cucumber, and lettuce/arugula. Dress with olive oil, vinegar or lemon juice, and season to taste.
  6. Arrange everything on a plate. Pair it with optional fresh juice or lemon water on the side for a refreshing touch!
