Ingredients

  • 1 cup broccoli florets
  • 1 medium zucchini, sliced
  • 1 cup cauliflower florets
  • 1 medium carrot, sliced into rounds
  • 1 handful kale or spinach, chopped
  • 1 tbsp olive oil or butter
  • 1 garlic clove, minced (optional)
  • Salt & pepper to taste
  • Splash of water for steaming

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic if desired and sauté until fragrant.
  2. Add broccoli, cauliflower, carrot rounds, and zucchini to the pan. Stir frequently for about 5-6 minutes until they begin to soften.
  3. Incorporate chopped kale and a splash of water. Cover with a lid and let steam for another 2-3 minutes until all vegetables are just tender.
  4. Season with salt and pepper to taste before serving hot.
