  • 6 chicken or turkey sausages
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice
  • 3 medium potatoes, peeled and chunked
  • 1 1/2 cups light cream or half-and-half
  • Salt, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, celery, carrots, and minced garlic until tender (about 5 minutes).
  2. Move veggies aside and add sausages. Brown them for 5–7 minutes; slice into bite-sized pieces.
  3. Sprinkle in dried thyme and flour, stirring for 2 minutes until coated.
  4. Gradually pour in broth while stirring; add bay leaves and chunked potatoes—bring to a boil.
  5. Reduce heat to low, stir in wild rice, and simmer uncovered for 30 minutes until rice is cooked.
  6. Remove bay leaves, stir in cream; season with salt to taste. Warm through before serving.
