Cornetti furbi are delightful Italian pastries that combine flaky, buttery layers with a sweet filling for an irresistible breakfast or snack. These charming treats can be enjoyed with coffee in the morning or as a sweet afternoon indulgence. With their tender texture and a hint of orange marmalade, cornetti furbi offer a unique twist on traditional croissants, making them perfect for gatherings or simply treating yourself.

Ingredients

  • 250 g all-purpose flour
  • 110 g milk
  • 1 egg
  • 50 g sugar
  • Pinch of salt
  • 20 g butter (plus 80 g for layering)
  • 3 g dry yeast (or 9 g fresh yeast)
  • 1 tablespoon orange marmalade
  • 1 teaspoon vanilla extract
  • For glazing: 1 beaten egg mixed with a tablespoon of cream or milk
  • Granulated sugar for sprinkling

Instructions

  1. In a mixing bowl, combine flour and yeast. Add egg, milk, vanilla, and orange marmalade; mix until no dry flour remains. Let rest for 10 minutes.
  2. Incorporate sugar and salt; mix well and let rest another 10 minutes.
  3. Add 20g butter; mix until smooth and refrigerate for one hour.
  4. Roll chilled dough into a rectangle (50cm by 30cm) and spread softened remaining butter evenly across.
  5. Fold the rectangle into four sections and chill again wrapped in plastic for one hour.
  6. Roll out to approximately (20cm by 35cm) and cut into triangles.
  7. Roll each triangle from the base to form cornetti and place on a parchment-lined baking sheet.
  8. Brush with egg wash, sprinkle with sugar, let rise until doubled (about 30 minutes), then bake at 180°C for about 20 minutes.
