  • 2 medium Yukon Gold potatoes, diced
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a large pot over medium heat, warm the olive oil. Sauté chopped onions, sliced carrots, and chopped celery until soft (about 5–7 minutes).
  2. Add minced garlic and cook until fragrant. Crumble in the ground turkey (or chicken) and brown thoroughly.
  3. Stir in diced potatoes and Italian seasoning until well combined.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for about 20 minutes or until potatoes are tender.
  5. Stir in heavy cream followed by fresh spinach or kale until wilted. Adjust salt and pepper before serving.
