  • 300 g cranberries (fresh or frozen)
  • 150 g granulated sugar
  • 150 g water
  • 380 g all-purpose flour
  • 100 g almond flour
  • 230 g unsalted butter (softened)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g dried cranberries (finely chopped)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the cranberry jam by simmering cranberries, granulated sugar, and water in a saucepan until thickened. Cool completely.
  2. For the cookie dough, cream together softened butter, granulated sugar, and brown sugar. Beat in eggs and vanilla, then mix in flours, salt, and dried cranberries.
  3. Chill the dough for at least 30 minutes before rolling it out to about 1/4 inch thickness.
  4. Cut out shapes with cookie cutters and bake at 180°C (350°F) for 10-12 minutes until lightly golden.
  5. Assemble by spreading cranberry jam on half of the cookies and topping with another cookie. Dust with powdered sugar before serving.
