  • 1 cup sliced mushrooms
  • 1 cup fresh spinach
  • 1 avocado, sliced
  • 1 tsp olive oil or butter
  • Salt and freshly cracked black pepper, to taste
  • Pinch of chili flakes (optional)

Instructions

  1. Heat olive oil or butter in a skillet over medium heat. Sauté sliced mushrooms for 4–5 minutes until golden brown. Add spinach and cook until wilted (about 1 minute). Season with salt and pepper.
  2. In a separate frying pan, cook eggs to your preference (sunny-side-up or over easy) and season lightly.
