  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve pasta water.
  2. In a skillet, heat olive oil and butter; season chicken with Cajun seasoning, then sear until golden.
  3. Add minced garlic and half of the Velveeta cheese until melted over the chicken.
  4. Prepare sauce by melting butter in the same skillet, adding remaining garlic, followed by cream and broth; whisk in cream cheese until smooth.
