  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 9 oz cheese tortellini (fresh or refrigerated)
  • 1 cup heavy cream
  • 4 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water (if needed)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions, reserving ½ cup of pasta water before draining.
  2. Season chicken with Cajun seasoning, Italian seasoning, salt, and pepper. Heat olive oil in a skillet and sear chicken for about 4–5 minutes on each side until golden brown. Set aside.
  3. In the same skillet, add butter and minced garlic; sauté briefly. Pour in heavy cream and add Velveeta cubes, stirring until melted. Add mozzarella and Parmesan, mixing until smooth.
  4. Toss cooked tortellini in the sauce. If too thick, gradually add reserved pasta water to reach desired consistency. Return chicken to skillet and simmer for 12 minutes.
  5. Serve hot, garnished with fresh parsley if desired.
