  • 2 chicken breasts, cut into 1” pieces
  • 8 oz cremini mushrooms, sliced
  • ½ medium onion, chopped
  • 3 cloves garlic, minced
  • ⅔ cup chicken broth
  • ½ cup full-fat sour cream
  • 3 tbsp olive oil, divided
  • 1 tbsp butter
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • Flour, for dredging
  • 1 tbsp Dijon mustard, or more to taste

Instructions

  1. Season the chicken with garlic powder, salt, and pepper; dredge lightly in flour.
  2. In a skillet over medium heat, heat 2 tablespoons of olive oil. Sear the chicken until browned on all sides; set aside.
  3. In the same skillet, melt butter with remaining olive oil and sauté mushrooms and onions until soft.
  4. Add minced garlic and Dijon mustard; cook until fragrant.
  5. Pour in chicken broth while scraping the pan to release flavor bits. Add the chicken back to the skillet and simmer for two minutes.
  6. Lower the heat and stir in sour cream until heated through but not boiling.
