  • 1 small yellow onion (diced)
  • 1 jalapeno pepper (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts (or 2 cups shredded chicken)
  • 1.5 cups cheddar cheese (shredded)
  • 1/3 cup cream cheese (softened)
  • Spices: cayenne pepper, cumin, hot sauce

Instructions

  1. In a large pot, melt butter over medium heat. Sauté diced onions and jalapenos for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Stir in tomato paste and remaining ingredients except for cheeses. Bring to a gentle boil.
  3. Cook for 20–25 minutes until chicken is cooked through. Remove and shred the chicken before returning it to the pot.
  4. Reduce heat and gradually add cheddar cheese and cream cheese, stirring until smooth.
