  • 2 lb beef chuck or stewing beef, cut into 1-inch cubes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste

  • 1 tbsp brown sugar

Instructions

  1. Prepare your ingredients by chopping the onion, mincing garlic, grating ginger, and cutting the beef into cubes.

  4. Stir in red curry paste, turmeric, paprika, ground coriander, and brown sugar until the beef is well-coated.
  5. Pour in coconut milk and bring to a gentle simmer. Cover partially with a lid and cook on low heat for 45 minutes to an hour until the beef is tender.
