  • 1 lb boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp minced garlic
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • Cajun seasoning, to taste
  • paprika, to taste
  • salt and pepper, to taste

Instructions

  1. Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
  2. Season chicken strips with Cajun seasoning, paprika, salt, and pepper.
  3. In a skillet, heat olive oil over medium-high heat and sear the chicken until golden brown on both sides. Remove from the skillet.
  4. Lower the heat and add butter and minced garlic; cook until fragrant.
  5. Stir in heavy cream and add Velveeta, mozzarella, and Parmesan cheeses until melted and smooth. Adjust consistency with reserved pasta water if necessary.
  6. Combine cooked penne with the sauce, then return the seared chicken to the pan or serve alongside.
  7. Garnish with fresh parsley if desired before serving.
