  • Olive oil
  • Salt & pepper
  • Fresh parsley
  • Baby potatoes, halved
  • Fresh thyme
  • Unsalted butter
  • Garlic, minced
  • Chicken broth
  • Heavy cream
  • Parmesan cheese
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss halved baby potatoes in olive oil, fresh thyme, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden brown.
  3. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 6-7 minutes per side until browned. Remove from skillet.
  4. In the same skillet, melt unsalted butter, sauté minced garlic for about 1 minute, then add chicken broth and heavy cream. Stir in grated Parmesan cheese and black pepper; simmer until thickened.
  5. Return chicken to the skillet, cooking until fully cooked through (about 5-7 minutes). Serve warm alongside roasted baby potatoes.
