  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup fresh green beans, trimmed

Instructions

  1. Rinse the rice under cold water until clear. In a saucepan, combine rinsed rice and chicken broth; bring to boil over medium heat. Reduce heat, cover, and simmer for about 18 minutes until tender.
  2. Season chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat; cook chicken for about 6-7 minutes on each side until golden brown.
  3. Remove cooked chicken from the skillet. Add minced garlic to the same skillet and sauté for about 30 seconds. Pour in heavy cream while stirring; add chopped parsley and thyme to create the sauce.
  4. Return chicken to the skillet, simmering with sauce for about 3-4 minutes to absorb flavors. Meanwhile, steam or blanch green beans in boiling water for about 3-5 minutes until bright green.
  5. Fluff cooked rice with a fork and plate alongside green beans topped with creamy herb chicken.
