  • 2 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp dried oregano
  • Juice of lemon
  • 300g penne pasta
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 200ml heavy cream
  • 50g grated Parmesan
  • 2 tbsp chopped parsley
  • 500g baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Marinate chicken in olive oil, lemon juice, paprika, garlic powder, oregano, salt, and pepper for 15 minutes.
  2. Preheat the oven to 200°C (400°F). Toss halved baby potatoes with olive oil and seasonings; roast for 25-30 minutes until golden.
  3. Cook penne pasta in salted boiling water until al dente; drain.
  4. In a skillet, melt butter and sauté minced garlic before adding heavy cream and Parmesan until smooth.
  5. Combine cooked pasta with the sauce and chopped parsley; season as needed.
  6. Grill marinated chicken on medium-high heat for about 5-6 minutes per side until fully cooked.
  7. Serve sliced chicken alongside creamy pasta and roasted potatoes; garnish with fresh parsley.
