  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and black pepper, to taste
  • 1 cup grated Parmesan cheese, for topping chicken
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, optional, for garnish
  • reserved pasta water, if needed

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and black pepper.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Cook chicken until golden brown, about 4-5 minutes per side. Add Parmesan cheese during the last minute to melt.
  3. Boil linguine in salted water until al dente; reserve some pasta water before draining.
  4. In the same skillet, melt remaining butter over medium heat. Sauté minced garlic until fragrant.
  5. Pour in heavy cream and bring to a simmer. Stir in Velveeta cheese until melted.
  6. Add mozzarella and Parmesan cheese; mix until thickened. If too thick, add reserved pasta water.
  7. Combine drained linguine with sauce; toss to coat evenly and simmer briefly.
  8. Serve by plating creamy linguine alongside seared chicken. Garnish with parsley if desired.
