  • 200g salmon fillet, skin removed, cut into chunks
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup cooked white rice
  • 1 cup heavy cream
  • 2 tbsp basil pesto
  • 1 garlic clove, minced

Instructions

  1. Cook the rice according to package instructions; keep warm.
  2. Steam broccoli florets for 4–5 minutes until bright green and tender-crisp; set aside.
  3. Season salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat, sear salmon for 2–3 minutes per side until lightly golden, then remove from the pan.
  4. In the same pan, sauté garlic until fragrant. Stir in heavy cream and basil pesto; simmer for about 2 minutes until slightly thickened.
  5. Return salmon and broccoli to the sauce, gently tossing to coat. Serve over warm rice.
