  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. tomatoes (roma, plum or tomatoes on the vine)
  • 1/2 cup basil leaves (about 1012 large leaves) or 2 teaspoons dried
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • salt + pepper, to taste
  • vegan cream, to serve

Instructions

  1. Prepare the onion and garlic; chop tomatoes into quarters.
  2. In a heavy-bottom pan, heat olive oil or water over medium heat. Sauté sliced onion for 7 minutes until softened; add minced garlic and cook for 1 minute.
  3. Stir in chopped tomatoes, basil leaves (or dried), oregano, salt, pepper, and vegetable broth.
  4. Bring to a boil, cover, reduce heat, and simmer for 15 minutes.
  5. Allow the soup to cool slightly before blending until creamy with an immersion blender.
  6. Adjust seasoning if needed and serve with a drizzle of vegan cream.
