  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar (for sauce)
  • 1/2 cup unsalted butter (for sauce)
  • Thinly sliced orange peel
  • 3/4 cup orange juice

Instructions

  1. In a mixing bowl, whisk together flour, sugar, and salt. Add eggs and vanilla extract; blend until smooth.
  2. Gradually mix in whole milk and water until you achieve a lump-free batter. Stir in melted butter and let rest for 15 minutes.
  3. Heat a non-stick skillet over medium heat and pour about 1/4 cup of batter, tilting the pan to spread evenly. Cook until edges lift; flip and cook for another minute.
  4. For the sauce, melt castor sugar in another skillet until lightly caramelized. Add unsalted butter, sliced orange peel, and orange juice; simmer for about five minutes.
  5. Fold each crepe into the sauce one at a time; serve warm with extra drizzle of sauce.
