  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • 5 chicken cutlets

  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • 2 romaine hearts (chopped)
  • 12 French baguettes

Instructions

  1. Prepare the dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, lemon juice, Parmesan cheese, minced garlic, black pepper, and salt until smooth. Set aside a portion for the salad mix with chopped romaine.
  2. Pound chicken cutlets to uniform thickness and season with salt and pepper.
  3. Set up a breading station with flour mixed with smoked paprika in one plate, whisked eggs in another, and a mixture of panko crumbs and spices in the third.
  4. Dredge each cutlet in flour, dip in egg, then coat with breadcrumb mixture.
  5. Fry the coated chicken cutlets in hot oil until golden brown and crispy; drain on a wire rack.
  6. Assemble sandwiches by spreading reserved dressing on sliced baguettes, adding fried chicken cutlets, Caesar salad mix, and optional extra Parmesan cheese.
