  • 1/4 cup vegetable oil
  • 16 corn tortillas (6-inch)
  • 1 teaspoon vegetable oil
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups enchilada sauce (or taco sauce)
  • 2 cups refried beans, warmed (16-ounce can)
  • 8 ounces cheddar cheese, shredded
  • Diced tomato
  • Sliced black olives
  • Green onion
  • Hot sauce
  • Salt to taste

Instructions

  1. Heat vegetable oil in a frying pan over medium heat. Fry corn tortillas 1-2 at a time for 2-3 minutes on each side until golden brown. Drain on paper towels and season lightly with salt.
  2. Preheat your oven to 350°F (175°C).
  3. In another pan, heat 1 tablespoon of vegetable oil over medium heat. Cook ground beef for 6-7 minutes until browned; stir in taco seasoning and 1/4 cup water, simmering for 10 minutes.
  4. On a baking sheet, place 8 crispy tortilla shells. Top each with enchilada sauce, refried beans, seasoned beef, then another tortilla with more enchilada sauce and shredded cheese.
  5. Bake for about 10 minutes until cheese is melted and bubbly.
  6. Finish with desired toppings and serve immediately.
