  • 6 medium carrots, peeled
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped
  • 2 cups (200 g) parmesan cheese, grated, divided
  • parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the carrots into 2-inch sections and then slice each section in half lengthwise.
  3. In a mixing bowl, combine olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped rosemary. Toss in the carrot pieces until well coated.
  4. Spread 1 ½ cups of grated parmesan cheese evenly on the prepared baking sheet.
  5. Place the carrot pieces cut-side down on top of the cheese and sprinkle any remaining cheese over them.
  6. Bake for 30-35 minutes until tender when pierced with a knife.
  7. Serve warm, garnished with chopped parsley.
