6 medium carrots, peeled
2 tablespoons extra virgin olive oil
½ teaspoon kosher salt
2 teaspoons garlic, minced
½ teaspoon onion powder
½ teaspoon red pepper flakes
1 teaspoon fresh rosemary, chopped
2 cups (200 g) parmesan cheese, grated, divided
parsley, chopped for garnish
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut the carrots into 2-inch sections and then slice each section in half lengthwise.
In a mixing bowl, combine olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped rosemary. Toss in the carrot pieces until well coated.
Spread 1 ½ cups of grated parmesan cheese evenly on the prepared baking sheet.
Place the carrot pieces cut-side down on top of the cheese and sprinkle any remaining cheese over them.
Bake for 30-35 minutes until tender when pierced with a knife.
