  • 1 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • ¼ cup chopped green onions

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, whisk together brown sugar, soy sauce, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic.
  3. Pour the sauce mixture over the chicken.
  4. Cover and cook on high for 4 hours or low for 6 hours until the chicken is tender.
  5. Remove chicken and shred or chop it.
  6. Mix cornstarch with water to create a slurry; stir into the sauce in the slow cooker.
  7. Return shredded chicken to the slow cooker and mix well; cook for an additional 5–10 minutes until thickened.
