Crockpot Buffalo Chicken Chili is a hearty and zesty dish that delivers comfort in every bite. This easy-to-make recipe combines tender chicken with fire-roasted tomatoes, creamy ingredients, and a kick of buffalo sauce, making it perfect for family dinners or meal prepping.

  • 1 ½ pounds boneless skinless chicken breasts
  • 1 tbsp chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup frozen corn
  • 2 cans fire-roasted tomatoes and green chiles
  • 2 cans cannellini beans
  • ½ cup buffalo sauce
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese, room temperature
  • 4 oz blended cottage cheese

Instructions

  1. Prepare the slow cooker by adding chicken, corn, tomatoes, beans, buffalo sauce, chili powder, cumin, garlic powder, onion powder, and broth. Mix well.
  2. Cover and cook on low for 4-6 hours or high for 3-4 hours until chicken is fully cooked.
  3. Remove chicken and shred using forks or a hand mixer.
  4. Stir in cream cheese until smooth; add shredded chicken back to the pot.
  5. Cook on low for an additional 30 minutes to blend flavors.
  6. Stir in blended cottage cheese just before serving.
