  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 3 cups potatoes, diced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and transfer to the slow cooker.
  2. Sauté the diced onion and minced garlic in the same skillet for 2-3 minutes until softened; add to the slow cooker.
  3. Add beef broth, diced potatoes, carrots, celery, tomatoes (with juices), Worcestershire sauce, salt, pepper, basil, and oregano. Mix well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  5. About 30 minutes before serving, stir in shredded cheddar cheese and heavy cream until melted and smooth.
  6. Taste and adjust seasoning as needed before serving with your favorite toppings.
