  • 1 lb. boneless, skinless chicken breasts/thighs
  • 1 (4 oz.) can diced green chiles
  • 2 (15 oz.) cans cannellini and great northern beans (drained)
  • 1 cup onion (chopped)
  • 3 cloves garlic (minced)
  • 8 oz. cream cheese (softened)
  • 2 cups chicken broth
  • 2 tbsp cilantro (fresh, chopped)
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder

Instructions

  1. Prepare ingredients by chopping onions and mincing garlic.
  2. Combine all ingredients (except chicken) in the slow cooker; stir well.
  3. Place the chicken on top of the mixture.
  4. Cover and cook on low for 7 hours or high for 4 hours.
  5. Shred the cooked chicken with forks and mix it back into the chili before serving.
