  • 6 chicken thighs (bone-in, skin-on)
  • 8 oz jar roasted red peppers (drained and sliced)
  • 1 cup mixed olives (green and kalamata)
  • ½ medium onion (sliced)
  • 2 Tbsp olive oil
  • 1 Tbsp honey (or monk fruit sweetener for keto)
  • Juice of 1 lemon
  • 6 garlic cloves (finely chopped)
  • 1 Tbsp fresh oregano (chopped)
  • 1 Tbsp fresh parsley (chopped)
  • 1 Tbsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Sear the chicken in a skillet over medium-high heat until golden brown on both sides. Transfer to a slow cooker.
  2. Add sliced roasted red peppers, olives, and onion around the chicken.
  3. In a mixing bowl, whisk together olive oil, honey, lemon juice, garlic, herbs, salt, and pepper. Pour over the chicken.
  4. Cover and cook on high for 3-4 hours or low for 6-8 hours until chicken reaches an internal temperature of 185°F.
