  • 1 pound turkey sausage (mild or spicy)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (russet or Yukon gold)
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Brown the turkey sausage until crumbled and cooked through, then drain excess grease and transfer to the crockpot.
  2. In the same skillet, sauté diced onion for 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. Combine browned sausage, sautéed onion, garlic, diced potatoes, chicken broth, salt, pepper, and thyme in the crockpot. Stir well.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are fork-tender.
  5. Stir in heavy cream and cheddar cheese (if using), cover again for another 15–20 minutes without boiling.
  6. Serve warm in bowls garnished with fresh parsley or green onions if desired.
