  • 16 ounces chicken sausage
  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 medium carrots (sliced)
  • 2 sticks celery (chopped)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14 ounce) can diced tomatoes
  • 4 cups chicken broth
  • 2 (9 ounce) packages refrigerated cheese tortellini
  • 3/4 cup heavy cream (optional)
  • 2 cups fresh baby spinach
  • Salt & pepper (to taste)

Instructions

  1. In a skillet, brown the chicken sausage and onions over medium heat for about 7-8 minutes until cooked through. Add minced garlic and sauté for an additional 30 seconds.
  2. Transfer the sausage mixture to a Crockpot and add chopped carrots, celery, crushed tomatoes, diced tomatoes, and chicken broth.
  3. Cook on high for 4-5 hours or low for 7-8 hours.
  4. About 30 minutes before serving, stir in the cheese tortellini, heavy cream if using, and fresh spinach. Season with salt and pepper to taste.
