  • 4 cups low-sodium beef broth
  • 2 large carrots, chopped
  • 2 ribs celery, chopped
  • 1 small onion, chopped
  • 1 can diced tomatoes (14 oz)
  • 1 pound potatoes, chopped
  • 1 cup trimmed and chopped fresh or frozen green beans
  • ½ cup canned or frozen corn
  • ¾ cup marinara sauce
  • 1 bay leaf
  • 1 tablespoon oil
  • 2 tablespoons tomato paste
  • 4 cloves garlic, minced
  • 1½ teaspoons salt
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • ¼ teaspoon paprika
  • ¼ teaspoon pepper

Instructions

  1. In a large skillet, heat oil over medium-high heat and brown the cubed beef on all sides before transferring it to the slow cooker.
  2. Sauté the carrots, celery, and onion in the same skillet until softened. Stir in tomato paste, garlic, salt, parsley, thyme, paprika, and pepper; cook for another minute.
  3. Add sautéed vegetables to the slow cooker along with beef broth, potatoes, diced tomatoes (with juice), green beans, marinara sauce, corn, and a bay leaf. Stir well.
  4. Cover and cook on low for 7 to 8 hours until everything is tender. Remove bay leaf before serving.
