  • 3.5 cups Vegetable Broth
  • 1 medium Jalapeño Pepper
  • 1 cup Corn
  • 3/4 cup Dried Red Lentils
  • 15 ounces Tomato Sauce
  • 1 medium Red or Green Bell Pepper
  • 3/4 cup Salsa
  • 15 ounces Black Beans
  • 15 ounces Red Beans
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Cayenne Pepper
  • 1/2 cup Light Cream Cheese
  • Salt
  • Pepper
  • Crushed Tortilla Chips
  • Sliced Avocado
  • Sour Cream
  • Diced Jalapeños
  • Chopped Red Onion
  • Shredded Cheddar
  • Fresh Cilantro

Instructions

  1. Chop the onion, jalapeño pepper, and bell pepper. Rinse the lentils under cold water until clear.
  2. In a slow cooker, combine all ingredients: onions, olive oil, vegetable broth, jalapeño pepper, corn, lentils, tomato sauce, bell pepper, salsa, black beans, red beans, spices, and cream cheese. Stir to mix well.
  3. Set the slow cooker on low heat and cook for 8 hours or high heat for about 4 hours until lentils are tender.
  4. Taste and adjust seasoning with salt and pepper as needed before serving.
  5. Serve hot in bowls topped with crushed tortilla chips, sliced avocado, sour cream, diced jalapeños, chopped red onion, shredded cheddar cheese, and fresh cilantro.
