  • 1 cup unsalted butter, cold
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1/2 cup warm milk
  • 1/4 cup warm water
  • 1 tablespoon active dry yeast
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup pistachio paste (for filling)
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the yeast mixture by combining warm milk, warm water, and yeast. Let sit for 5 minutes until bubbly.
  2. In a large bowl, mix the flours, sugar, and salt. Add the yeast mixture to form a dough.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in an oiled bowl; cover and let rise for 1 hour.
  5. Shape cold butter into a rectangle between parchment paper and chill.
  6. Roll out dough into a rectangle, place butter block in center, fold over and seal edges.
  7. Roll out again into a long rectangle; fold like a letter and chill for 30 minutes.
  8. Repeat the rolling and folding process two more times.
  9. Cut triangles from rolled-out dough and place pistachio paste at wide end before rolling into croissant shapes.
  10. Let croissants rise on a baking sheet lined with parchment paper for an hour before brushing with egg wash.
  11. Preheat oven to 400°F (200°C) and bake for 20-25 minutes until golden brown.
