  • 3/4 cup vegan butter (softened to room temperature)
  • 3/4 cup brown sugar
  • 1/2 cup raw cane sugar
  • 1 large egg (at room temperature)
  • 1 egg yolk (at room temperature)
  • 2 tsp vanilla extract
  • 1 cup dairy-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, baking soda, arrowroot, and sea salt.
  3. In another bowl, cream together vegan butter with both sugars until light and fluffy.
  4. Add the egg, egg yolk, and vanilla extract; mix until incorporated.
  5. Gradually combine dry ingredients with the wet mixture until just mixed.
  6. Fold in dairy-free chocolate chips evenly.
  7. Scoop dough onto prepared baking sheet with space between each cookie.
