  • 2 cups cooked and shredded chicken
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 can (10 oz) red enchilada sauce
  • Chopped cilantro (for garnish)
  • Sour cream (for serving)

Instructions

  1. Prepare the chicken by boiling or baking until fully cooked. Shred using two forks.
  2. In a skillet over medium heat, sauté chopped onion and minced garlic until soft.
  3. Add shredded chicken to the skillet; season with cumin, chili powder, salt, and pepper. Cook for an additional 3-5 minutes.
  4. Pour a little enchilada sauce into the bottom of a baking dish to prevent sticking.
  5. Roll tortillas with a generous spoonful of chicken mixture and cheese; place seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with more cheese.
  7. Cover with foil and bake at 375°F (190°C) for 20-25 minutes, then uncover and bake for another 5-10 minutes until bubbly.
  8. Let rest before serving; garnish with cilantro and serve with sour cream.
