  • 5 butter croissants
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup almond flour
  • 2 tbsp flour (AP, plain)
  • 1 cup water
  • 10 tbsp sliced almonds
  • powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine 1 cup water and 1/2 cup sugar to make simple syrup; heat until dissolved and cool.
  3. In a mixing bowl, cream together butter, sugar, and salt. Add eggs and mix well.
  4. Stir in almond flour and plain flour until smooth. Transfer to a piping bag.
  5. Slice croissants horizontally and brush inside with simple syrup.
  6. Pipe almond cream into each croissant half, replace the top, and spread more cream on top before sprinkling with sliced almonds.
  7. Bake for 15–20 minutes until golden brown.
  8. Allow to cool slightly before dusting with powdered sugar.
