  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic
  • 4 tablespoons butter
  • 1 cup chicken broth
  • 3 cups whole milk
  • 8 ounces cream cheese
  • 2 cups shredded mozzarella cheese
  • 1 pound spaghetti

Instructions

  1. Cook spaghetti according to package directions until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning. In a skillet, heat olive oil over medium-high heat; cook chicken until browned, about 6–8 minutes. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic for 1 minute.
  4. Add flour to make a roux, whisking for 1–2 minutes.
  5. Gradually whisk in milk and chicken broth; bring to a gentle simmer.
  6. Stir in cream cheese and 1 cup mozzarella until melted and smooth.
  7. Add Parmesan cheese, salt, pepper, and optional red pepper flakes.
  8. Return cooked chicken to the skillet; simmer for another 2–3 minutes.
  9. Toss cooked spaghetti into the sauce until well-coated.
  10. Top with remaining mozzarella, cover to melt cheese for 2–3 minutes before serving.
