  • 357 g all-purpose flour
  • 210 ml warm water
  • 1 tsp instant yeast
  • 1 tsp salt
  • 42.6 g butter
  • 32 g sugar
  • 8090 g cranberries
  • 8090 g raisins
  • 6070 g currants
  • 8090 g dried cherries (optional)
  • 1/2 tsp cinnamon powder
  • 1/4 tsp cardamom powder
  • 1/4 tsp nutmeg powder (optional)
  • 1/2 tsp vanilla sugar or pure vanilla extract

Instructions

  1. In a mixing bowl, combine warm water and yeast; let sit for about five minutes until frothy.
  2. In another bowl, mix flour, salt, sugar, cinnamon powder, cardamom powder, and nutmeg powder.
  3. Pour the yeast mixture into the dry ingredients along with melted butter; stir until combined.
  4. Gently fold in the dried fruits until evenly distributed.
  5. Knead on a floured surface for about ten minutes until smooth.
  6. Place in a greased bowl, cover, and let rise for two hours or until doubled in size.
  7. Shape into a loaf and place in a greased loaf pan; let rise again for an hour.
  8. Preheat oven to 375°F (190°C) and bake for about 40 minutes or until golden brown.
