  • 3 cups uncooked pasta
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small red onion (chopped)
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers (chopped)
  • 1 cup little tomatoes (halved)
  • 5 ounces crumbled feta
  • Salt & pepper (to taste)
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon (packed) brown sugar

Instructions

  1. Boil a large pot of salted water.
  2. Cook the pasta al dente according to package directions.
  3. Once cooked, drain it using a colander and rinse under cool water until chilled.
  4. While the pasta cooks, gather all dressing ingredients.
  5. Add them to a jar with a secure lid.
  6. Shake vigorously until well combined; adjust oil or vinegar to your taste.
  7. In a large mixing bowl, combine all salad ingredients.
  8. Pour the dressing over the salad and toss well to coat everything evenly.
  9. Season with salt and pepper as needed; serve immediately or refrigerate for flavors to meld before serving.
