- 3 cups uncooked pasta
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 small red onion (chopped)
- 1/2 cup Kalamata olives
- 3 mini cucumbers (chopped)
- 1 cup little tomatoes (halved)
- 5 ounces crumbled feta
- Salt & pepper (to taste)
- 2 tablespoons red apple vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon Dijon mustard
- 1 clove garlic (minced)
- 1 teaspoon fresh parsley (chopped)
- 1/2 teaspoon dried oregano
- 1 teaspoon (packed) brown sugar
- Boil a large pot of salted water.
- Cook the pasta al dente according to package directions.
- Once cooked, drain it using a colander and rinse under cool water until chilled.
- While the pasta cooks, gather all dressing ingredients.
- Add them to a jar with a secure lid.
- Shake vigorously until well combined; adjust oil or vinegar to your taste.
- In a large mixing bowl, combine all salad ingredients.
- Pour the dressing over the salad and toss well to coat everything evenly.
- Season with salt and pepper as needed; serve immediately or refrigerate for flavors to meld before serving.
