  • 1 Tbsp lemon zest (from 2 lemons)
  • 1 3/4 cups sugar
  • 4 large eggs
  • 1/2 cup salted butter

Instructions

  1. Prepare a double boiler by filling a medium saucepan with water and bringing it to a simmer.
  2. In a heatproof mixing bowl, whisk together lemon juice, lemon zest, sugar, and eggs. Add cubed butter.
  3. Place the bowl over simmering water and whisk continuously for about 20-25 minutes until thickened and reaching 170°F.
  4. Strain the curd through a fine mesh sieve into a glass bowl to remove lumps.
  5. Cover with plastic wrap directly on the surface of the curd to prevent a skin from forming.
  6. Allow to cool at room temperature before refrigerating for at least 4 hours or overnight.
