  • 1 garlic clove, minced
  • 1 cup frozen peas and carrots
  • 2 tbsp tomato paste
  • ½ cup beef broth
  • 3 large potatoes, peeled and chopped
  • ¼ cup milk (or plant-based alternative)
  • 2 tbsp butter (or vegan butter)
  • Shredded cheddar cheese (optional for topping)
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil peeled and chopped potatoes in salted water until fork-tender, about 10–12 minutes; drain and mash with milk, butter, salt, and pepper.
  3. In a skillet over medium heat, brown the ground meat; drain excess fat. Add chopped onion and minced garlic; sauté until translucent.
  4. Stir in peas and carrots, tomato paste, beef broth, salt, and pepper; simmer until slightly thickened (3–5 minutes).
  5. Grease a muffin tin; fill each cup with meat mixture up to two-thirds full. Top with mashed potatoes.
  6. Optionally sprinkle cheese on top; bake for 10–15 minutes until golden brown.
  7. Allow to cool slightly before serving; garnish with parsley.
