  • 1/2 cup white sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 ¼ cup milk
  • 1/2 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup jam or preserves

Instructions

  1. Preheat your oven to 400℉ and spray a muffin tin with non-stick cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, beat together milk, melted butter, egg, and vanilla until blended.
  4. Pour the wet mixture into the dry ingredients and stir until just combined; the batter should be lumpy.
  5. Fill each muffin cup one-third full with batter. Add a teaspoon of jam on top of the batter in each cup and cover with remaining batter.
  6. Bake in the preheated oven for about 20–25 minutes or until a toothpick inserted comes out clean.
  7. Let cool for one minute before transferring muffins to a wire rack to cool completely.
