  • 8 medium peppers (any color)
  • 23 small garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 34 tablespoons organic cider vinegar
  • ⅙ teaspoon Celtic salt
  • Optional: 1 tablespoon maple syrup
  • Optional: fresh parsley

Instructions

  1. Preheat your oven to 185°C (365°F). Wash the peppers and place them on a baking tray in a single layer.
  2. Roast the peppers for 30-35 minutes until tender with slightly charred skins. Once done, cover them with a towel for 10-15 minutes to sweat.
  3. Peel off the skins and place the roasted peppers in a ceramic or glass bowl.
  4. In a small mixing bowl, whisk together cider vinegar, olive oil, Celtic salt, minced garlic, and optional maple syrup until well combined.
  5. Arrange the roasted peppers on a serving plate and drizzle with the vinaigrette before serving.
